  KADDU/ LAUKI CHANA DAAL RECIPE

Comfort food is universal, we all have a thing for certain food our belly craves in times of stress.  But while most of us experience the desire for comfort food, what we want is often so different. For some it can be pancakes or brownies but for me it has to be something like Kaddu Chana Daal. Reminds me of my ghar and my mother. This dish is healthy, tasty and so easy to cook.

Ingredients:
1 cup Chana Daal 
1 glass of water 
Half onion chopped
Half tomato and 2 green chilies chopped
1 Lauki chopped
4 spoons oil 
1 spoon Cumin seeds 
1 Bay leaf 
3 dried red chilies
1 spoon Garlic paste
2 spoons salt 
1 spoon turmeric powder 
1 spoon red chilly powder 
1 spoon Kashmiri red chilly powder

 METHOD:

Step 1: In a pressure cooker, add 1 cup washed split chickpeas (chana daal).
Add 1 glass or enough water to cover the Daal. Add a spoon of salt, turmeric and red chilly powder (or as per your taste). Cook on high flame and switch of after 2 whistles. (Daal should be only 60% cooked)

Step 2: Wash and peel a Pumpkin (Lauki/Kaddu). Chop off the edges, remove the seeds and cut into small pieces. After our Daal is 60% done, add pumpkin to it and cook it until one more whistle. 

Step 3: In a wok at 4-5 spoons of any oil. Add 1 spoon cumin seeds,1 bay leaf & some dry red chilies. After you hear crackling sounds, add 1 spoon garlic paste,chopped onions and cook for few minutes until translucent. Now add chopped tomatoes and green chilies. Add salt, turmeric powder, red chilly powder and Kashmiri red chilly powder for a good colour. Bhuno well. Keep adding water in small quantities. After 10-12 minutes you will see oil on the surface which means our gravy is ready.

Step 4: Now add the boiled pumpkin and chana daal to this gravy with water and cook until thick. Check and add more salt if needed. Keep the gravy thick pr loose as per your taste. 

Step 5 : Add some chopped coriander leaves & serve hot with rice and some thick curd!
